Ingredients
- 2 beets, cut into large chunks
- 1 red onion, thinly sliced into half-moons
- 300 g (about 10.5 oz) fresh goat cheese
- 1 bunch of watercress
- Olive oil
- Fresh thyme
- Salt
Instructions
- Preheat your oven to 200°C (about 400°F).
- Place the beets on a baking sheet, drizzle with olive oil, add garlic, thyme, and salt.
- Roast in the preheated oven for approximately 20 minutes or until the beets are tender but not falling apart.
- Spread the beets on a plate and top with crumbled goat cheese and sliced red onion.
- Drizzle with olive oil and serve with watercress.
