Beet Salad with Goat Cheese Recipe



Ingredients

  • 2 beets, cut into large chunks
  • 1 red onion, thinly sliced into half-moons
  • 300 g (about 10.5 oz) fresh goat cheese
  • 1 bunch of watercress
  • Olive oil
  • Fresh thyme
  • Salt

Instructions

  1. Preheat your oven to 200°C (about 400°F).
  2. Place the beets on a baking sheet, drizzle with olive oil, add garlic, thyme, and salt.
  3. Roast in the preheated oven for approximately 20 minutes or until the beets are tender but not falling apart.
  4. Spread the beets on a plate and top with crumbled goat cheese and sliced red onion.
  5. Drizzle with olive oil and serve with watercress.
