Sorghum is a cereal also known as “milho-zaburro” in Brazil, “mapira” in Mozambique, and “massambala” in Angola.
Ingredients
- 1 cup of sorghum, soaked for 4 to 6 hours
- 4 cups of water
- 1 zucchini, diced
- 1 teaspoon of ground cumin
- 4 tablespoons of olive oil
- Salt
- Juice of 1 lemon
- ½ red onion, chopped
Instructions
- Cook the sorghum with water and salt for 50 minutes.
- Sauté the onion in olive oil and add the zucchini, cumin, and salt.
- When the sorghum is ready, place it in a bowl and mix with the cooked zucchini.
- Add the lemon juice and adjust the cumin and salt to taste.
- Serve hot or cold.
